I had a small (actually rather large) zucchini problem here at home recently, and I solved it with this healthy chocolate zucchini bread recipe!
However! I made the substitutions, as noted in my Sweet Healthy Snack post. So, while the original recipe is filled with sugar, fat, and unhealthy grains, MINE is sugar free, fat free, and filled with whole grains.
The KAF loaf, with the sugar and the vegetable oil, contains around 4,500 calories in the entire loaf! My entire loaf, however, because of the easy substitutions, is a mere 2,200 calories. That is HALF of the calories you can cut out! Not only is it a lower calorie snack, it is a healthier snack! Here are the easy substitutions I made:

I followed the recipie exactly as is on the KAF website, except for the following:
Brown Sugar Substitute
There are 550 empty and pointless calories in half a cup of brown sugar, which is what this recipe calls for. Fortunately, those are the easiest 550 calories to get rid of!
Monk Fruit Sugar! I used this Monk Fruit Brown Sugar. It is the absolutely best zero calorie sugar substitute out there! No weird taste whatsoever. 1:1 conversion, so no crazy baking math.
AP Flour Replacement
All Purpose flour, should be called No Purpose Flour. 🙁 It is simply too easy to substitute it with a more nutritious alternative. Whole wheat flour, white whole wheat included, is simply more nutrient tense than any AP flour. When watching what you eat, it is important that all of your calories count, and are nutrient dense.
Replace all AP flour with white whole wheat flour.
Vegetable Oil Substitute
Apple sauce! Eliminate about 2000 calories from unhealthy fat with this substitution. In all sweet breads and cakes you can always replace oils with apple sauce! Always opt for the no sugar added apple sauce, otherwise you are just adding unnecessary sugar. So, make sure that your apple sauce only contains the natural sugar of the apple, and not literally as an ingredient!
Espresso Powder. So this last product is not a substitute, but it is the Espresso powder. If you have not tried adding espresso powder in your chocolate recipes it is a MUST!
This ingredient, espresso powder. is easy to skip. It is often listed as optional. However, it will increase the richness of your chocolate flavor so much!

And substitute out:
- unsweetened applesauce instead of vegetable oil
- brown monk fruit sugar instead of brown sugar
- white whole wheat flour instead of white AP flour
